Haley's Fresh Chicken Salad

 

GLUTEN & GRAIN FREE

This fresh, high protein salad is a family favourite with leafy greens, cherry tomatoes, sliced red onions and topped with our Original Grain-Free Granola for a salad, with the perfect taste and texture.

INGREDIENTS

Salad:

  • 6 cups mixed greens (I use baby spinach and arugula mix)
  • 2 cups shredded chicken (I use roasted chicken)
  • 1 cup raspberries
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Haley's Original Grain-Free Granola

Raspberry Vinaigrette:

  • 1/2 cup raspberries (fresh or frozen)
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons honey

DIRECTIONS

  1. Combine all the ingredients for the raspberry vinaigrette in a blender and process until smooth.
  2. To make the salad, toss together the mixed greens, shredded chicken, raspberries, red onion, and Haley's Original Grain Free Granola in a large bowl.
  3. Drizzle the raspberry vinaigrette over top of the salad and give it a good toss or drizzle it over individual portions when serving. 
  4. Season with additional cracked black pepper, if desired, and enjoy!
