Haley's Fresh Chicken Salad

This fresh, high protein salad is a family favourite with leafy greens, cherry tomatoes, sliced red onions and topped with our Original Grain-Free Granola for a salad, with the perfect taste and texture.

INGREDIENTS
Salad:
- 6 cups mixed greens (I use baby spinach and arugula mix)
- 2 cups shredded chicken (I use roasted chicken)
- 1 cup raspberries
- 1/2 cup red onion, thinly sliced
- 1/2 cup Haley's Original Grain-Free Granola
Raspberry Vinaigrette:
- 1/2 cup raspberries (fresh or frozen)
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon balsamic vinegar
- 2 tablespoons honey
DIRECTIONS
- Combine all the ingredients for the raspberry vinaigrette in a blender and process until smooth.
- To make the salad, toss together the mixed greens, shredded chicken, raspberries, red onion, and Haley's Original Grain Free Granola in a large bowl.
- Drizzle the raspberry vinaigrette over top of the salad and give it a good toss or drizzle it over individual portions when serving.
- Season with additional cracked black pepper, if desired, and enjoy!
