Chocolate Almond Butter Nut Balls
Recipe:
I have so many snacks and bars that I often make that I keep in the fridge, to grab when I am in a hurry.
Ingredients:
2/3 cups almonds
2/3 cup cashews
2/3 cup sunflower seeds if you wish
Oilve oil
2/3 cup almond butter
1/2 honey
1 cup dark chocolate chips
A pinch of sea salt
Directions:
Spread the nuts on a baking sheet and drizzle lightly with olive oil. Roast for 12-15 minutes. Watch as they don't get too roasted or brown as they will be overcooked. Let them cool off until room temperature. Once they are cooled, place in a food processor and use the pulse option. You don't want to chop them too much as they will become a powder consistency. Pulse enough to make them small pieces. Next, pour the nuts in a bowl and add the almond butter. Warm the almond butter on the stove to liquify. Stir once everything is combined in the bowl. Add the honey and the sea salt mix well and form into balls. When ready, melt the chocolate chips and dip or roll the ball into the chocolate until completely covered. Put in the freezer to harden. Then refrigerate. Delish! Just like our dark chocolate sea salt granola.
