Ingredients:

  • 8 rice cakes (thin or thick—your choice!)
  • 4 tbsp peanut butter
  • 1 package of dark chocolate chips (melted)
  • A pinch of sea salt
  • 2 tbsp Haley's Pantry dark chocolate granola

Instructions:

  1. Prepare the Rice Cakes: Lay out 8 rice cakes. Spread a thin layer of peanut butter evenly over 4 of them.
  2. Assemble the Sandwiches: Place the remaining 4 rice cakes on top of the peanut-buttered ones, creating 4 rice cake sandwiches.
  3. Dip in Chocolate: Melt the dark chocolate and dip each rice cake sandwich into the chocolate, making sure it’s fully coated.
  4. Add Toppings: Place the chocolate-dipped sandwiches on parchment paper. Sprinkle with a pinch of sea salt and top with Haley's Pantry dark chocolate granola.
  5. Freeze to Set: Pop the rice cakes in the freezer for about 10 minutes, or until the chocolate hardens.

Once hardened, enjoy a protein-packed, crunchy, and indulgent snack that satisfies both your sweet cravings and hunger.

Store in a container with an airtight lid for up to one week in the fridge.
