Ingredients:
- 6 rice cakes (preferably the larger ones)
- 1 cup dark chocolate chips
- 1 tbsp organic peanut butter
- A pinch of sea salt
- 2 tbsp Haley’s Pantry granola (OG or dark chocolate)
Instructions:
- Break the Rice Cakes: Start by breaking the rice cakes into bite-sized pieces. The larger rice cakes work best for this recipe.
- Melt the Chocolate: In a pot over low heat, add the dark chocolate chips and melt them, stirring occasionally.
- Add Peanut Butter: Once the chocolate is melted, stir in the organic peanut butter. Mix until the chocolate and peanut butter are fully combined and smooth.
- Coat the Rice Cake Pieces: Dip each rice cake piece into the melted chocolate using a spoon, covering them completely. Gently place the coated pieces onto a parchment-lined tray or plate.
- Top with Sea Salt and Granola: Sprinkle a pinch of sea salt over each rice cake piece, followed by a bit of Haley’s Pantry granola for crunch and flavor.
- Freeze to Set: Place the tray in the freezer for about 20 minutes, or until the chocolate has fully hardened.
- Store: Once set, transfer the chocolate peanut butter rice cake pieces to an airtight container. Store in the fridge for up to a week.
