Clean Peanut Butter Granola Bars

These are the cleanest granola bars—gluten-free, sweetened only with maple syrup, and packed with real ingredients. I like to cut them into small squares so you can enjoy a little fix when you need it. Keep them chilled in the fridge for a firm, satisfying bite, and save the crumbles to sprinkle on yogurt, smoothie bowls, or ice cream!

Ingredients:

  • 1¾ cups gluten-free oats

  • 1 tsp cinnamon

  • ½ tsp Himalayan sea salt

  • 1 cup Haley’s Pantry Peanut Butter Granola

  • ¼–½ cup dark chocolate chips (use your preference)

  • ¼ cup unsweetened shredded coconut

  • 1 cup natural peanut butter (smooth, with no added sugar or oils)

  • ½ cup pure maple syrup

  • 1 tsp vanilla extract

  • Optional: additional oats or granola to help bind if mixture feels too wet

  • Melted dark chocolate for drizzling

Instructions:

  1. In a large mixing bowl, combine oats, cinnamon, salt, granola, chocolate chips, and shredded coconut.

  2. In a small saucepan over low heat, warm the peanut butter, maple syrup, and vanilla until smooth and easy to pour.

  3. Pour the wet mixture over the dry ingredients and stir well until fully combined. If the mixture seems too wet, add a little more granola or oats until it binds well.

  4. Line a 9x9 Pyrex dish with parchment paper. Press the mixture firmly and evenly into the dish.

  5. Drizzle with melted dark chocolate.

  6. Refrigerate for at least 2 hours, or overnight, until set.

  7. Once firm, slice into small bite-size squares.

  8. Store in an airtight container in the fridge. Save any edges or crumbles in a separate container—they make the perfect crunchy topper!
