Clean Peanut Butter Granola Bars
Clean Peanut Butter Granola Bars
Gluten-Free | Refined Sugar-Free | No-Bake
These are the cleanest granola bars—gluten-free, sweetened only with maple syrup, and packed with real ingredients. I like to cut them into small squares so you can enjoy a little fix when you need it. Keep them chilled in the fridge for a firm, satisfying bite, and save the crumbles to sprinkle on yogurt, smoothie bowls, or ice cream!
Ingredients:
-
1¾ cups gluten-free oats
-
1 tsp cinnamon
-
½ tsp Himalayan sea salt
-
1 cup Haley’s Pantry Peanut Butter Granola
-
¼–½ cup dark chocolate chips (use your preference)
-
¼ cup unsweetened shredded coconut
-
1 cup natural peanut butter (smooth, with no added sugar or oils)
-
½ cup pure maple syrup
-
1 tsp vanilla extract
-
Optional: additional oats or granola to help bind if mixture feels too wet
-
Melted dark chocolate for drizzling
Instructions:
-
In a large mixing bowl, combine oats, cinnamon, salt, granola, chocolate chips, and shredded coconut.
-
In a small saucepan over low heat, warm the peanut butter, maple syrup, and vanilla until smooth and easy to pour.
-
Pour the wet mixture over the dry ingredients and stir well until fully combined. If the mixture seems too wet, add a little more granola or oats until it binds well.
-
Line a 9x9 Pyrex dish with parchment paper. Press the mixture firmly and evenly into the dish.
-
Drizzle with melted dark chocolate.
-
Refrigerate for at least 2 hours, or overnight, until set.
-
Once firm, slice into small bite-size squares.
-
Store in an airtight container in the fridge. Save any edges or crumbles in a separate container—they make the perfect crunchy topper!
