Dark Chocolate Raspberry Bites
These dark chocolate raspberry bites make a delicious treat for any time of day or special occasion. They are simple to make, require just a few ingredients, and come together in minutes.
Ingredients
-
1 heaping cup fresh raspberries
-
1 tablespoon chia seeds
-
1 tablespoon maple syrup or honey
-
1 cup dark chocolate chips
-
Granola, for sprinkling
Instructions
-
In a medium bowl, mash the raspberries with a fork until mostly smooth.
-
Add the chia seeds and maple syrup or honey, and mix well. Let the mixture sit for 5 minutes to thicken slightly.
-
Line a baking sheet with parchment paper. Using a tablespoon, scoop the raspberry mixture onto the sheet, leaving space between each bite.
-
Place the baking sheet in the freezer for about 1 hour, or until the bites are fully frozen.
-
While the bites are setting, melt the dark chocolate chips until smooth using a double boiler or microwave in short intervals, stirring frequently.
-
Once frozen, dip each raspberry bite into the melted chocolate, coating completely.
-
Sprinkle with granola while the chocolate is still wet.
-
Return the bites to the freezer until the chocolate is fully set.
Storage
Store in the freezer for up to 2 weeks, or in the fridge for up to 5 days.
