These dark chocolate raspberry bites make a delicious treat for any time of day or special occasion. They are simple to make, require just a few ingredients, and come together in minutes.

Ingredients

  • 1 heaping cup fresh raspberries

  • 1 tablespoon chia seeds

  • 1 tablespoon maple syrup or honey

  • 1 cup dark chocolate chips

  • Granola, for sprinkling

Instructions

  1. In a medium bowl, mash the raspberries with a fork until mostly smooth.

  2. Add the chia seeds and maple syrup or honey, and mix well. Let the mixture sit for 5 minutes to thicken slightly.

  3. Line a baking sheet with parchment paper. Using a tablespoon, scoop the raspberry mixture onto the sheet, leaving space between each bite.

  4. Place the baking sheet in the freezer for about 1 hour, or until the bites are fully frozen.

  5. While the bites are setting, melt the dark chocolate chips until smooth using a double boiler or microwave in short intervals, stirring frequently.

  6. Once frozen, dip each raspberry bite into the melted chocolate, coating completely.

  7. Sprinkle with granola while the chocolate is still wet.

  8. Return the bites to the freezer until the chocolate is fully set.

Storage

Store in the freezer for up to 2 weeks, or in the fridge for up to 5 days.
