Dressed-Up Sweet Potatoes with Herbs, Feta & Balsamic Drizzle

Dressed-Up Sweet Potatoes Recipe
Ingredients:
- 2–3 medium sweet potatoes, washed and sliced into 1/3-inch rounds
- 1/4 cup feta cheese, crumbled
- 1 green onion, chopped
- 1/4 purple onion, finely chopped
- 2 tbsp fresh cilantro or herbs of your choice, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar, plus extra for drizzling
- 1/4 tsp cinnamon
- 1/4 tsp smoked paprika
- Kosher salt and black pepper to taste
- Haley's Pantry OG Granola sprinkled on top
Directions:
- Preheat the oven to 400°F (200°C).
- Arrange sweet potato rounds on a baking sheet and drizzle with olive oil, just enough to coat them lightly. Spread them out in a single layer.
- Sprinkle salt, pepper, cinnamon, and smoked paprika over the sweet potatoes. Drizzle with balsamic vinegar and flip to season both sides evenly.
- Bake for 25 minutes, then flip each round and bake for another 15–20 minutes or until the edges are golden brown and crispy.
- Remove from the oven and transfer to a serving plate. Drizzle with a bit more balsamic vinegar, then sprinkle with crumbled feta, green and purple onions, chopped herbs, and OG granola.
- Serve warm, and enjoy!
