Gluten-Free Chocolate Peanut Butter Granola Cookies

 

Who doesn't love homemade cookies? This version is not only gluten-free but also clean, healthy, and loaded with all the goodness you need. With only 10 minutes of prep time and 10 simple ingredients, this recipe is quick, easy, and full of flavour to satisfy your cravings. You can rest assured that these cookies are delicious and packed with health benefits.

Ingredients:
2 eggs at room temperature
1/2 cup of coconut sugar, date sugar, or monk fruit (any sweetener works)
1 cup gluten-free oats
1 tsp baking soda
1/4 tsp sea salt
1 tsp organic vanilla extract
1 cup natural peanut butter
1/2 cup dark chocolate chunks ( I used HU chocolate, and there were chunks of chocolate in every bite...yum)!
1/2 cup Haley's Pantry OG granola

Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. In a large mixing bowl, whisk the eggs and sugar and then add the baking soda and  salt. Stir. Add the vanilla, peanut butter and stir in the oats.  Fold in the chocolate chips. Using an ice cream scoop, drop a spoonful of dough onto the baking sheet and sprinkle with extra sea salt. It makes about 15 cookies. Leave enough room between them as they spread out while baking. Enjoy!
