Granola Topped Date Bark

This bark is the ultimate healthy indulgence—chewy, crunchy, sweet, and slightly salty all at once. The natural caramel flavor of soft Medjool dates pairs perfectly with creamy peanut butter, crunchy granola, and rich dark chocolate. Finished with a sprinkle of flaky sea salt, every bite has layers of texture and flavor. Best of all, it’s simple to make and you can break off as much as you want!

Ingredients

  • 9 soft Medjool dates (use more for a larger bark)

  • 2–3 tablespoons natural peanut butter (smooth or crunchy)

  • ½ cup Haley's Pantry chocolate and coconut granola 

  • ¼ cup dark chocolate chips or chunks (melted)

  • Flaky sea salt, for finishing

Instructions

  1. Prepare the dates

    • If your dates aren’t soft, soak them in warm water for 5–10 minutes, then pat dry.

    • Arrange the dates in three snug rows on a parchment-lined plate or tray, pressing them close together so they form a solid base.

  2. Add the peanut butter

    • Smear a thin, even layer of peanut butter across the entire surface of the dates.

  3. Top with granola

    • Sprinkle the granola generously over the peanut butter.

    • Use the back of a spoon or your hands to gently press the granola down so it sticks in place.

  4. Finish with chocolate

    • Drizzle melted dark chocolate over the top (or cover fully if you prefer a richer bark).

    • Sprinkle with a pinch of flaky sea salt.

  5. Set and serve

    • Place in the fridge for 15–20 minutes, or until the chocolate firms up.

    • Break into pieces and enjoy!

Tip

Store any leftovers in an airtight container in the fridge for up to a week (if they last that long!).
