Protein Pancakes

These pancakes are incredibly delicious and packed with fiber and protein. They make a great breakfast option that will keep you full and satisfied until your next meal.

Ingredients:

  • 2 eggs
  • 1 banana (not too ripe to keep sugar content lower)
  • ¼ cup oats
  • 2 drops vanilla bean extract
  • 1 tbsp pressed cottage cheese
  • 1 tbsp Greek yogurt
  • 1 cup mixed berries
  • 1 mini snack pack of Haley's Pantry OG Granola
  • Olive oil (for the pan)

Instructions:

  1. Mash the banana in a bowl until smooth.
  2. In a separate bowl, whisk the eggs and add the vanilla, cottage cheese, and oats. Mix until well combined.
  3. Heat a grill or non-stick pan over medium heat and add a little olive oil.
  4. Spoon small amounts of the pancake mixture onto the pan, forming 7-8 mini pancakes.
  5. Cook for about 5 minutes, then flip and cook for another 3-4 minutes until golden brown.
  6. Transfer to a plate and top with Greek yogurt, fresh berries, and a sprinkle of Haley’s Pantry OG Granola.
  7. Enjoy!
