Protein Pancakes
These pancakes are incredibly delicious and packed with fiber and protein. They make a great breakfast option that will keep you full and satisfied until your next meal.
Ingredients:
- 2 eggs
- 1 banana (not too ripe to keep sugar content lower)
- ¼ cup oats
- 2 drops vanilla bean extract
- 1 tbsp pressed cottage cheese
- 1 tbsp Greek yogurt
- 1 cup mixed berries
- 1 mini snack pack of Haley's Pantry OG Granola
- Olive oil (for the pan)
Instructions:
- Mash the banana in a bowl until smooth.
- In a separate bowl, whisk the eggs and add the vanilla, cottage cheese, and oats. Mix until well combined.
- Heat a grill or non-stick pan over medium heat and add a little olive oil.
- Spoon small amounts of the pancake mixture onto the pan, forming 7-8 mini pancakes.
- Cook for about 5 minutes, then flip and cook for another 3-4 minutes until golden brown.
- Transfer to a plate and top with Greek yogurt, fresh berries, and a sprinkle of Haley’s Pantry OG Granola.
