These breakfast cookies are nutritious, delicious, and ridiculously easy to make! Packed with wholesome ingredients and just the right amount of sweetness, they’re perfect for busy mornings or an afternoon snack. Plus, they store beautifully in the fridge or freezer—meal prep win!

Ingredients
- 2 cups oats (any kind will do)
- 1 cup almond butter
- ¼ cup maple syrup
- ½ mashed banana
- ⅓ cup applesauce
- 1½ cups Haley’s Pantry Ultimate Chocolate Granola (or your fave flavor!)
- 1 teaspoon cinnamon
- ½ teaspoon Himalayan sea salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend all the ingredients in a food processor for about 10 seconds—just enough to mix. If you don’t have a processor, stir everything together in a bowl until fully combined.
- Scoop out spoonfuls of the dough and roll into balls (about 2 tablespoons each). Flatten slightly with a fork.
- Bake for 15-18 minutes, until golden brown and firm.
- Cool completely before enjoying!
