Nutty Dark Chocolate Cookie Dough Bites

With just a few simple ingredients, you can whip up these homemade energy bites—perfect for a grab-and-go snack. They provide the boost you need when you need it most. I love making my own snacks because I know exactly what’s in them. These little bites combine walnuts, almonds, pecans, and dark chocolate chips for the perfect balance of crunch, flavour, and nutrition. Plus, the added protein from peanut butter makes them even better!

Ingredients:

  • 1 cup mixed nuts (walnuts, almonds, and pecans) or swap in Haley’s Pantry Mixed Bag Granola for extra crunch
  • ¼ cup smooth peanut butter
  • 2 tbsp dark chocolate chips
  • ¼ cup coconut oil, melted
  • ¼ cup shredded coconut
  • 1 tsp vanilla extract
  • A pinch of sea salt

Instructions:

  1. In a food processor, chop the mixed nuts and shredded coconut or pulse the granola a few times until finely chopped.
  2. Add peanut butter, melted coconut oil, vanilla, and sea salt. Mix until well combined.
  3. Stir in the dark chocolate chips with a spoon.
  4. Roll the mixture into small bite-sized balls and place them on a parchment-lined tray.
  5. Refrigerate for at least 30 minutes until firm.
  6. Store in an airtight container in the fridge for up to a week or in the freezer for longer.
