Organic Almond Butter Bites
Organic Almond Butter Nut Balls
These are so easy to make and they make a great treat for later in the day. I keep them in a sealed tight container in the fridge and they can last for weeks, but they’ll be gone in a few days. Mark my words!! The whole family will get their hands on them and eat them up.
Ingredients:
- 2/3 of organic almonds
- 2/3 of organic cashews
- 2/3 of organic sunflower Seeds
- 2/3 cup of organic almond butter (smooth)
- 1/2 cup organic honey
- 2/3 cup of organic dark chocolate chips. (I love Camino, Pascha or Hu Kitchen)
- 1/4 tsp Himalayan sea salt
Directions:
- Put the nuts on a baking sheet.
- Brush lightly with olive oil
- Roast the nuts on 350 for 12 minutes
- Take the nuts out of the oven. Let them cool completely
- Throw the almond into the cuisinart and pulse to chop - about five times. Remove and place in bowl
- Throw the cashews in the cuisinart and pulse to chop - about five times. They will chop faster then almonds as they are a softer nut. Remove and place in bowl
- Add sunflower seeds
- Add the sea salt
- In a saucepan, add the almond butter and honey and and mix until smooth.
- Add the wet mixture to the nuts and seeds and mix well with a spoon or spatula.
- Mix well until it forms a ball
- Form smaller balls and place them on parchment paper on a tray
- Melt the chocolate on the stove. I like to fill a saucepan or a pot with a little water. Then place a glass bowl resting on top with the chocolate chips to melt. Stir until melted and smooth. You can use a double boiler as well.
- Remove the and dip the balls into the chocolate with a spoon. Toss them around to coat evenly.
- Let them chill in the fridge until they Harden. A couple of hours and then store in a container.
