Directions:

  1. Combine blueberries, maple syrup, water, lemon zest, and lemon juice in a small saucepan.

  2. Stir together over low to medium heat until the mixture begins to simmer.

  3. Once simmering, reduce the heat slightly and let the compote gently bubble for a few more minutes, stirring occasionally.

  4. When it starts to thicken (about 10–12 minutes), remove from heat and stir in the vanilla extract.

  5. You can mash the berries with a fork for a softer texture, or leave them whole for a chunkier finish — anything goes!

  6. Let cool slightly before serving, or enjoy it warm.

How to Use It:

  • Spoon over Greek yogurt or cottage cheese

  • Drizzle over pancakes or waffles

  • Add a layer to chia pudding or parfaits
